To obtain the accreditation allowing the production, marketing and sale of Bresaola della Valtellina, Producers need to meet mandatory minimum requirements.
They must:
• be located in the protected area, which means in the Sondrio province;
• comply with applicable law, particularly referring to production facilities and equipment, and the Company Self-monitoring Plan that ensures consumer’s safety, and the health-hygiene quality of the food products placed on the market.
Moreover, Accredited Products, strictly comply with the Production Regulations approved at EU level, and are subject to constant monitoring by the Inspection Agency “C.S.Q.A. Cerificazioni srl” based in Thiene (VI), Italy.
