Consortium
he Bresaola della Valtellina Protection Consortium, established on May 23, 1998, and recognized by the Ministry of Agricultural, Food and Forestry Policies, is the official body responsible for promoting, enhancing, and protecting Bresaola della Valtellina PGI—one of the most celebrated gastronomic excellences of Made in Italy, both in Italy and abroad.
The Consortium was created to ensure the authenticity, quality, and controlled origin of a product with centuries of history. Thanks to its deep connection to local know-how and tradition, Bresaola della Valtellina has earned the prestigious European PGI (Protected Geographical Indication) recognition.
Only certified producers operating in the province of Sondrio and strictly following the Production Specification may use the PGI label. This certification guarantees consumers an authentic, safe, and high-quality product—a perfect balance of tradition and innovation.
The Bresaola della Valtellina Protection Consortium is a point of reference for both producers and consumers. It promotes the image of the PGI product, safeguards its authenticity from imitations and counterfeits, and enhances its quality in Italy and abroad by ensuring full compliance with the Production Specification.

The Guarantee Of The Specification

To be certified as PGI, a product must meet the strict criteria established in the Production Specification for the Protected Geographical Indication “Bresaola della Valtellina.” This document, approved by the European Union, defines the conditions and requirements for: Name, Production Area, Raw Materials, Processing Method, Curing, Product Characteristics, Controls, Designation, and Presentation.
All PGI products are recognized as such when at least one stage of production takes place in a designated area. In the case of Bresaola della Valtellina PGI, the entire transformation process must occur within the province of Sondrio.
The production process is subject to strict controls by CSQA Certificazioni—appointed by MASAF—which regularly verifies producer compliance with the Specification.
Bresaola della Valtellina PGI is produced exclusively by companies based in the province of Sondrio—the historical and geographical heart of this Italian excellence.
These companies, central to national Bresaola production, are a pillar of the local economy and the Valtellina agri-food sector.
With near-total (99%) membership in the Protection Consortium, Bresaola della Valtellina PGI producers share a strong commitment to preserving this time-honored craft.
Carefully selected raw materials, high production standards, food safety, regular inspections, and ongoing oversight by the Consortium and public authorities form a structured system that ensures the excellence of Bresaola della Valtellina PGI.
